    Twice Baked Sweet Potatoes

    List of Ingredients


    • 6 large sweet potatoes- boiled
    • 1/4 cup butter, melted
    • 1can (8 1/4 oz. size) crushed pineapple
    • 1 tsp. ground cinnamon
    • 1 tsp. salt
    • 1/2 tsp. ground nutmeg
    • 3 crups brown sugar
    • 1 1/2 cups walnuts, chopped
    • 1/2 cup butter


    Instructions


    1. Boil sweet potatoes. When tender drain then mash
    2. 1/4 cup butter,sinnamon, salt, nutmeg and 1 cup
    3. of the brown sugar until smooth. Gradually add
    4. pineapple, beat until fluffy. pour into casserole
    5. dish. Stir 2 cups brown sugar, chopped walnuts
    6. and 1/2 cup butter. Sprinkle on top of the sweet
    7. potatoes. Bake at 350 degres for 30 minutes.
