    New England Winter Chili

    Perfected Over the Years Based on Multiple Recipes


    List of Ingredients


    • 2.5 pounds lean ground beef
    • 2 cans (15oz) red beans
    • 2 cans (15oz) diced tomatoes
    • 1 can (6oz) tomato paste
    • 1 chopped yellow onion
    • 1 cup water
    • 2 chopped chile peppers or jalapenos (take the seeds out!)
    • 4 beef bouillon cubes
    • 3 stalks chopped celery
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 3 tablespoons chili powder
    • 1 tablespoon worcestershire sauce
    • 1 tablespoon minced garlic
    • 2 teaspoons cumin
    • 1/2 teaspoon cayenne pepper
    • 1 tablespoon oregano
    • 1/2 teaspoon basil
    • 1 teaspoon brown sugar
    • 1 teaspoon cinnamon
    • 8 cloves, ground


    Instructions


    1. In a large skillet, brown the meat over medium-high heatDrain off any excess fat. Place the meat into a crockpot.

    2. Add the red beans, diced tomatoes, and tomato paste to the meatAdd the onion, celery, hot peppers, beef bouillon cubes and the waterMix

    3. Season the mixture with the chili powder, worcestershire sauce, garlic, cumin, cayenne pepper, oregano, bay leaves, sugar, cinnamon, cloves and finally, the salt and pepper

    4. Mix everything well, cover and simmer over low heat for 3 -4 hoursBe sure to occasionally stir to blend all the flavors well

    5. Serve topped with fresh chopped green spring onions, sour cream, shredded reduced fat cheddar cheese and a bit of cilantro.



    Final Comments


    Note: You can add more cayenne pepper and/or hot sauce if you wish the chili to be more spicy or have a kick.
