New England Winter Chili

List of Ingredients
- 2.5 pounds lean ground beef
- 2 cans (15oz) red beans
- 2 cans (15oz) diced tomatoes
- 1 can (6oz) tomato paste
- 1 chopped yellow onion
- 1 cup water
- 2 chopped chile peppers or jalapenos (take the seeds out!)
- 4 beef bouillon cubes
- 3 stalks chopped celery
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 tablespoons chili powder
- 1 tablespoon worcestershire sauce
- 1 tablespoon minced garlic
- 2 teaspoons cumin
- 1/2 teaspoon cayenne pepper
- 1 tablespoon oregano
- 1/2 teaspoon basil
- 1 teaspoon brown sugar
- 1 teaspoon cinnamon
- 8 cloves, ground
Instructions
- In a large skillet, brown the meat over medium-high heatDrain off any excess fat. Place the meat into a crockpot.
- Add the red beans, diced tomatoes, and tomato paste to the meatAdd the onion, celery, hot peppers, beef bouillon cubes and the waterMix
- Season the mixture with the chili powder, worcestershire sauce, garlic, cumin, cayenne pepper, oregano, bay leaves, sugar, cinnamon, cloves and finally, the salt and pepper
- Mix everything well, cover and simmer over low heat for 3 -4 hoursBe sure to occasionally stir to blend all the flavors well
- Serve topped with fresh chopped green spring onions, sour cream, shredded reduced fat cheddar cheese and a bit of cilantro.
Final Comments
Note: You can add more cayenne pepper and/or hot sauce if you wish the chili to be more spicy or have a kick.
