    Greek Shrimp and Couscous

    List of Ingredients


    • 1 (10 ounce) package of plain couscous
    • 2 teraspoons olive oil
    • 1 pound frozen shrimp, de-veined and peeled
    • 1 can (14 ounces) diced tomatoes
    • 1/2 cup Kalamatta olives, pitted and sliced
    • 1 tablespoon dried mint
    • 1 teaspoon garlic and herb seasoning
    • 1 teaspoon dried oregano
    • salt
    • ground black pepper


    Instructions


    1. Cook couscous according to package directions
    2. To a skillet, add olive oil and shrimp over medium high heat.
    3. Add tomatoes, mint, garlic-herb seasoning, oregano and the olives. Mix and simmer for 3-5 minutes or until shrimp is cooked.
    4. Serve over couscous.
