Greek Shrimp and Couscous

List of Ingredients
- 1 (10 ounce) package of plain couscous
- 2 teraspoons olive oil
- 1 pound frozen shrimp, de-veined and peeled
- 1 can (14 ounces) diced tomatoes
- 1/2 cup Kalamatta olives, pitted and sliced
- 1 tablespoon dried mint
- 1 teaspoon garlic and herb seasoning
- 1 teaspoon dried oregano
- salt
- ground black pepper
Instructions
- Cook couscous according to package directions
- To a skillet, add olive oil and shrimp over medium high heat.
- Add tomatoes, mint, garlic-herb seasoning, oregano and the olives. Mix and simmer for 3-5 minutes or until shrimp is cooked.
- Serve over couscous.
