Steak with Shiitake Mushroom Sauce

- 1/2 cup chopped onion
- 1 garlic clove, minced
- 2 cups thinly sliced shiitake mushroom caps
- 1 cup low sodium beef broth
- 1/3 cup dry white wine
- 1 tablespoon balsamic vinegar
- 1/2 cup minced green onions
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 to 1 1/2 pounds steak
- non-stick cooking spray
Instructions
- Sauce:
- Heat a skillet over medium high heat. Add the onion and garlic and saute 2 minutes. Add the mushrooms and saute for 4 minutes.
- Add the broth, wine and balsamic vinegar and bring to a boil. Reduce heat to medium and simmer until reduced to about 1 1/4 cups (about 6 minutes).
- Add the green onions and cook for an additional minute.
- Steak:
- Preheat the broiler or grill.
- Sprinkle the steak with the salt and pepper and cook until desired doneness. Allow the steak to rest and then cut into diagonal slices.
- Cover with the sauce and serve with green beans and rice.
