Chicken w/ Caramelized Onion Soup

- 2 c. roasted chicken, cut into strips
- 2 tsp. vegetable oil
- 2 medium onion, halved and thinly sliced
- 8 c. Chicken Broth
- 1/8 tsp. pepper
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 3/4 c. uncooked trumpet-shaped pasta
Instructions
- Heat the oil in a 10" skillet over med-high heat. Add the onions and cook until they begin to brown, stirring occasionally. Reduce the heat to medium. Cook until the onions are tender and caramelized, stirring occasionally. Remove the skillet from the heat.
- Heat the broth, pepper, carrots and celery in a 4qt. saucepan over med-high heat to a boil. Stir in pasta and chicken in the saucepan. Reduce the heat to med. Cook for 10 minutes or until pasta is tender. Stir in the onions and serve immediately.
