Roasted Garlic Mashed Potatoes

- 16 small red potatoes
- 1 head roasted garlic
- 1/2 stick butter
- 1 C. heavy cream
- 2 pinch's kosher salt
- pepper, to taste
Instructions
- Cut potatoes in half and place in a large pot.
- Add cold water to just cover the potatoes, then add one pinch of salt to the water.
- Bring the pot to a boil and simmer for 10 minutes, or until the potatoes are just fork tender.
- Drain the water from the pot and add the roasted garlic, butter , heavy cream, second pinch of salt and pepper.
- Use a large fork and mash the potatoes by hand.
