Oven-Grilled Spice-Rubbed Chops

List of Ingredients
- 6 pork loin center-cut chops (2 lbs total)
- 2 Tbsp Cajun or Creole seasoning
- 1 Tbsp cayenne pepper
- 1 tsp salt, or to taste
- 2 tsp ground black pepper, or to taste
- 1 tsp dried rosemary
- Olive oil, for drizzling
- 1 to 2 tsp liquid smoke
- 2 Tbsp Worcestershire sauce
Instructions
- Preheat broiler.
- Sprinkle the Cajun seasoning, cayenne pepper, salt, black pepper and rosemary evenly over one side only of each of the chops. Drizzle a little olive oil over the chops, then use the back of a spoon to rub seasonings and oil into the meat.
- Turn chops over. Drizzle the liquid smoke and Worcestershire sauce evenly over the other (unseasoned) side of the chops. Sprinkle a little olive oil over.
- Divide chops evenly among 2 large cast iron (or oven-proof) skillets. Place on the middle oven rack under the preheated broiler. Cook for 30 minutes, turning every 5 minutes or so during cooking, until chops are well-browned and cooked through. Serve with barbecue sauce, if desired, and with sauteed vegetables on the side.
