List of Ingredients
2 pounds ground chuck
3 15 oz. cans dark red kidney beans
1-1/4 pounds ground turkey*
3 14-1/2 oz. cans diced tomatoes
1 medium onion, coarsely chopped
1 29 oz. can tomato sauce
2-1/2 teaspoons salt
3 large bay leaves
2-1/2 teaspoons fresh ground black pepper
1 stalk celery (leave whole)
2 tablespoons chili powder
1 carrot (leave whole)
*Or use 1-1/4 lbs. fresh sausage. If using sausage, cut salt to 2 teaspoons.
Recipe
In a 6 quart stock pot, brown meat. Stir often so it doesn't burn. Add salt, onion, and pepper while cooking this. Add the rest of the ingredients, bring to a boil. Reduce heat and simmer 2 to 3 hours. Stir often so meat will not burn on the bottom of the pot. After 1-1/2 hours remove the carrot, celery, and bay leaves. Continue to simmer.
For 21 quart stock pot, triple the recipe, and add 5 29 oz cans red kidney beans, plus 4 29 oz cans crushed tomatoes. This will fill the pot about three quarters full and will serve about 40.
This soup is even better after warming it up again. Can be frozen for future use.
