    Grandma's Homemade Buttermilk Biscuits

    3 cups all purpose flour
    3 tsp. baking powder
    3/4 cups buttermilk
    1 tsp. salt
    3/4 tsp. baking soda
    3/4 cup Crisco® shortening
    (if using self-rising flour, leave out the baking powder, salt and soda)

    Heat oven to 450º F. (230º C). Move oven rack to middle position. Sift flour to make sure there are no lumps. Add baking powder, salt and baking soda. Add Crisco slowly, working it into dry ingredients. Add buttermilk, working it into mixture. While it's heating, knead dough until about consistency of clay that kids play with. Make it a little drier if need be by sprinkling more flour on your counter or cutting board. As you knead dough, it will pick up more flour. After you have it right consistency, you can shape biscuits by hand or using a cookie cutter. If you want them more perfect, roll out your dough using a rolling pin and then cut them with a round cookie cutter. Place biscuits on a cookie sheet either lightly greased or lightly sprinkled with flour. If you use flour option, be sure not to use too much. Bake biscuits roughly 18 minutes, depends on how hot oven is). If rack is too low, you can move biscuits to top rack last minute or so to get them browned just the way you want. Leave on middle rack and they should turn out lightly browned.
