    1/2 lb. sweet potato
    1/4 tsp. each cinnamon, allspice
    1-1/4 cup sifted, unbleached flour
    2 tap. baking powder
    1/4 tsp. salt
    1-1/2 tbsp. chilled butter or margarine, cut into small chunks
    1/4 cup skim milk

    Heat oven to 425ºF (215ºC). Lightly coat a cookie sheet with nonstick cooking spray. Prick sweet potato with a fork and bake 1 hour, or cook in microwave on High 8 minutes. Combine cinnamon, allspice, flour, baking powder and salt in a food processor. Add butter,and pulse 6 or 7 times, until slightly crumbly. Or cut in, using a bowl with 2 forks, or a pastry cutter. Add 3/4 cup baked sweet potato meat and mix until crumbly. Add milk, 1 tbsp. at a time until a soft, kneadable dough is formed. May not use *all* milk depending on humidity. Place dough on a lightly-floured board, knead about 30 seconds. Roll out to 1/2" thick and cut 12 rounds. using a 1-1/2" biscuit cutter. Reshape and re-roll dough as necessary, but try not to overwork it. Lay rounds of dough on prepared pan. Bake 10 - 12 minutes, until tops are lightly browned. Makes 12 biscuits.
