Banana Oatmeal Bread

1/2 cup shortening
1 cup white sugar
2 eggs, beaten
1/2 tsp. vanilla extract
1 cup each all-purpose flour, quick cooking oats
1 tsp. baking soda
1/2 tsp. each salt, ground cinnamon
1-1/2 cups mashed bananas
1/4 cup milk
1/2 cup chopped raisins (optional)
Recipe
Heat oven to 350º F (175º C).
Grease 1 (9x5") loaf pan and set aside.
Cream shortening and sugar.
Add eggs and vanilla, beat until fluffy.
Sift flour, oatmeal, baking soda, salt and cinnamon.
Add dry ingredients alternately with bananas and milk. Mix until blended.
Fold in raisins and pour into pan.
Bake 50 - 60 minutes; remove from oven and cover for 5 minutes.
Makes 1 loaf.
