Three "C" Bread

Recipe Introduction
(Carrots, coconut and cherries give this quick bread its name.)
List of Ingredients
1/2 cup each vegetable oil, milk
1 cup sugar
2-1/2 cups all-purpose flour
1 tsp. each baking powder, baking soda, cinnamon
1/2 tsp. salt
2 cups shredded carrot
1-1/3 cups shredded coconut
1/2 cup each chopped maraschino cherries, raisins, chopped pecans
Recipe
Heat oven to 350ºF (175ºC). In a large bowl, combine eggs, oil, milk and sugar; beat well. Sift flour, baking powder, baking soda, cinnamon and salt. Add to egg mixture. Stir until just moistened. Add carrot, coconut, cherries, raisins and nuts, blending thoroughly. Generously grease 1 (9x5x3") loaf pan. Pour batter into prepared pan. Bake 55 - 60 minutes in pan. Let cool 10 minutes before turning out to cool thoroughly. Wrap in foil and store in refrigerator or freezer. May be frozen up to 2 months. Makes 1 large loaf.
