    Triple Corn Spoon Bread

    1 cup fat free sour cream
    3 tbsp. stick butter or margarine, melted
    1 large egg
    1/2 cup chopped onion
    1 can (15 1/4 oz.) no salt added whole kernel corn, undrained
    1 can (14 3/4 oz.) no-salt-added cream-style corn
    1 pkg. (8 1/2 oz.) corn muffin mix
    enough cooking spray

    Recipe



    Heat oven to 350°. Combine first 3 ingredients in a large bowl; stir well with a whisk. Stir in onion, both cans of corn and muffin mix. our into an 8 x 8 baking dish coated with cooking spray. Bake 1 hour or until pudding is set and lightly browned.
