List of Ingredients
6 cups loosely packed frozen hash browns, thawed
2/3 cup butter or margarine, melted
2 cups cooked ham, diced -OR--browned breakfast sausage
1 cup each cheddar cheese, shredded; milk
6 - 8 eggs
1/2 tsp. salt
to taste Fresh ground pepper
1/4 cup tomato catsup
Recipe
Heat oven to 425º F. (215º C). Spray a 9x13" baking dish with oil. Press hash browns on bottom of pan. They should be at least 1/2" deep as they shrink down as crust bakes / browns. Drizzle melted butter over potatoes. Bake 25 minutes, until crisp and browned. Reduce heat to 350º F. (175º C) Sprinkle ham or sausage and cheese over crust. Beat eggs, milk and salt; pour over crust and filling. Return to oven and bake, covered, 25 - 35 minutes or until knife inserted near center comes out clean. In last few minutes of baking, uncover and add decorative squiggles of catsup to top. Makes 8 servings.
Options: Sautè onions and mushrooms with a bit of salt and pepper. Use this in place of meat in the recipe. Vegetarian sausage will also work. Replace butter with canola oil and use the whites of 4 eggs with 1 whole egg to reduce cholesterol content.
