    Chocolate & Sour Cream Marble Cake

    6 oz. plain chocolate
    8 oz. butter, softened
    1 cup sugar
    4 eggs
    12 oz. self-raising flour
    1/4 pt sour cream
    2 tsp. vanilla extract
    1/2 tsp almond extract
    icing sugar


    Recipe



    Preheat oven to 350° F (180° F).
    Melt the chocolate and allow to cool slightly.
    Cream together the butter and sugar until light and fluffy.
    Beat in the eggs one at a time. Add the vanilla and almond extracts, and fold in the flour. Divide the mixture into two.
    Add the sour cream to one half and the melted chocolate to the other. In a buttered and thickly sugared 9 to 10-inch ring pan, put alternate spoonfuls of the mixtures. Using a teaspoon, cut down into the mixture and swirl together. Bake for about 1 hour. Serve warm or cold, dredged with icing sugar.
    Tip: Powdered sugar is also a nice decorative finish to this cake.
