English Fruit Scone

List of Ingredients
8oz Self raising flour (or add 3tspns of baking powder to flour)
pinch of salt
mix both of these together
2 oz of margarine
rub in margarine with your fingers until it disappears into flour
1 oz of caster sugar
Stir in sugar
2 oz of currants/sultanas or substitute for cranberries etc.
stir in fruit
1 medium egg (beaten with enough milk approx. 2 tblspns - keep some back for end)
Recipe
add to mixture until it makes a good consistency to roll out onto a floured surface (not too sticky not too dry).
after rolling out cut into 21/2 inch rounds (you can use a small glass cup etc.) use remaining egg mixture to lightly coat top of rounds
put on a grease proof tin in pre heated oven (425 degrees) for approx. 15 mins or until lightly golden in colour.
(Cut in half, add butter & preserves & to really indulge oneself a spot of cream!! Enjoy!! :)
