I used my food processor to grate FOUR CUPS (4) OF PEELED GRANNY SMITH APPLES, after grating saved in bowl with lemon water and SALT ...


List of Ingredients




Beat Together:

TWO LARGE EGGS
1 CUP GRANULATED SUGAR + 3/4 Cup light brown sugar
1/2 Cup Light oil (Vegetable, etc.)
//// ADD 2 TEASPOONS VANILLA ////
ADD TO THIS MIXTURE:
4 CUPS GRATED APPLES
1 CUP CHOPPED NUTS = I USED WALNUTS

SIFT together:
2 CUPS FLOUR
2 teaspoons soda
1 teaspoon baking powder
1 teaspoon salt

OVEN SET TO 350 DEGREES
add dry mixture to beaten mixture/ blend well = I used cupcake papers and used ice cream scoop to fill cups ...... baked for 25 minutes - ck' d w/ toothpick!
CAKE WILL BAKE APPOX. ONE HOUR

Moist, nutty muffins = Have fun baking and making your kitchen smell yummy!
