    1 lb. mascarpone
    1/4 cup sugar
    2 tbsp. cognac or amaretto
    1 cup heavy cream
    24 ladyfingers
    1/2 cup cutter-chopped bittersweet chocolate
    1 cup brewed espresso, at room temperature

    Recipe



    Put mixer bowl and beaters in freezer. Using whisk and a different large bowl, mix mascarpone, sugar and cognac or amaretto until mixture is smooth. Using cold bowl, and mixer with cold beaters, whip cream until soft peaks form. Fold into cheese mixture. Dip 12 ladyfingers in espresso and place on bottom of an 8x8" pan. Spread 1/2 of cheese mixture on top. Sprinkle with 1/2 chocolate. Repeat dipping and layers with remaing ingredients. Cover with plastic wrap and refigerate overnight. Makes 9 servings.
