Cream Cheese Flan

List of Ingredients
1 1/2 cups of sugar, divided
7 egg yolks
1 (14oz) can sweetened condensed milk
1 (12oz) can evaporated milk
3/4 cup milk
1/2 teaspoon vanilla
1/8 teaspoon salt
4 egg whites
1 (8oz) package Cream Cheese softened
Recipe
Cook 1 cup of sugar in medium pot
over medium heat stirring constantly
(about 5 minutes or until sugar melts
and turns a light golden brown)
Quickly pour hot caramelized sugar into a 2 quart
flan dish. Carefully tilt and turn dish to evenly
coat bottom and sides. Sugar should harden after 5 minutes
Whisk together egg yolks
and next 5 ingredients in a large bowl
Mix well egg whites, cream cheese and
remaining 1/2 cup sugar until smooth
Stir egg white mixture into egg yolk mixture
pour the combined mixture thru a wire mesh strainer
into a large bowl
Then pour into the flan dish covered with the
caramelized sugar
Place flan dish in a large shallow pan
Add enough hot water to cover at least 1/3 of flan dish
Bake 350 degrees for 1 hour and 45 minutes
Remove from water dish and cool completely on wire rack
Chill at least 3 hours
Run a knife around edges of flan to loose and invert
onto serving dish
(NOTE: I add a dash cinnamon to my flan)
