    CRUST:
    6 whole low fat honey graham crackers, crushed to fine crumbs
    2 tbs butter or margarine, melted and mixed with 1 tbs honey


    FILLING:
    3 oz box strawberry gelatin
    16 oz tub 1% fat cottage cheese
    2 tbs sugar or Splenda
    1 tsp vanilla
    2 bricks 8 oz each fat free cream cheese, softened
    2/3 cup boiling water


    TOPPING:
    1 pint strawberries
    2 tbs sugar free strawberry jelly, melted

    Recipe




    Coat 8x3" springform pan or other pan with nonstick spray.
    1.) CRUST---Mix cracker crumbs with butter and honey mixture until moistened.
    Press firmly over bottom and 3/4" up side of pan. Place in freezer.


    2.) FILLING---Dissolve gelatin in boiling water in a 1 cup measure.
    Puree cottage cheese in blender or food processor until creamy.
    Add gelatin, cream cheese, sugar and vanilla, process until smooth.
    Pour into crust, smooth top. Cover and refrigerate 4 hours or until set.


    3.) TOPPING---Wash and dry berries, remove stems.
    Quarter each lengthwise and place in a bowl, add jelly and toss to coat.
    Remove sides of springform pan, place cheesecake on serving plate.
    Spoon on berry mixture and sprinkle with mint leaves, if desired, then serve.
