Peach Cheesecake Bars

Cake Layer:
1/2 cup each all-purpose flour, granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup (1/2 stick) cold unsalted butter or margarine, cut into bits
1 large egg
Cheese Layer:
1 pkg. (8 oz.) cream cheese, softened
2 tbsp. granulated sugar
1 tsp. vanilla extract
1 large egg, at room temperature
1 tsp. fresh lemon juice
1 tbsp. all-purpose flour
1/8 tsp. salt
Additional ingredients
2 peaches
2 tbsp. granulated sugar, divided
Recipe
Heat oven to 350ºF (175ºC). Cake layer: In a bowl, sift flour, sugar, baking powder and salt. Add butter and combine mixture until it resembles coarse meal. Add egg; blend mixture well and spread it onto bottom of a 13x9" baking pan. Cheese Layer: In a bowl with an electric mixer, beat cream cheese, sugar and vanilla extract until mixture is combined well. Add egg, lemon juice, flour and salt. Beat mixture until it is smooth. Spread mixture evenly over batter. Additional: Slice peaches thinly. Arrange in 1 layer on top of cheese layer; sprinkle top with 1 tbsp. sugar. Bake cheesecake 18 - 20 minutes, until it is just golden. Sprinkle cheesecake with remaining 1 tbsp. sugar. Let it cool and cut it into 3x1" bars. Transfer bars to a container, separate by sheets of wax paper. Bars may be made 2 days in advance, kept in an airtight container, separated by sheets of waxed paper and chilled. Makes 36 bars.
