    Chili Meat Ball Stew & Cornmeal dumpling

    List of Ingredients

    1 lb. lean ground beef
    1/2 chopped onion
    1/4 c. chopped green pepper
    1/4 c. dry brad crumbs
    1/4 c. milk
    1 egg
    4 t. beef-flavor instant bouillon
    1 16 oz. can stewed tomatoes- undrained
    1 1/2 t. chili powder
    vegetable oil, optional
    2 T. Flour
    3 cups water
    1 16 oz. can Kidney beans, undrained. (Joan of Arc is the best)
    Chopped parsley


    Recipe

    In medium bowl combine meat, 1/4 cup onion, green pepper, crumbs, milk, egg,
    1 T. Bouillon and 1/2 t. chili powder. Mix well. Shape into 16 meatballs. In Dutch oven, brown meat balls; remove. Add oil if needed to make 2 T. drippings; cook remaining onion until tender. ( NOT Brown)
    Add flour; cook and stir until golden. Add water, tomatoes, meatballs.
    Remaining Bouillon and chili powder.
    Bring to a boil. Reduce hear;
    COVER and simmer 30 minutes.
    Meanwhile prepare dumplings, Stir beans into chili Mixture;; bring to boil. Drop dumplings by spoonfuls onto boiling stew. Cook uncover 10minutes; cover and cook 10 minutes longer. Garnish with parsley

    Cornmeal dumplings: Stir together
    1 1/2 cup biscuit baking mix, 1/2 cup yellow corn meal and 3/4 cup milk.
