    Quick Coffee Cake with Crumb Topping

    Recipe Introduction

    I always double the amount of the crumb topping on mine. I like lots of topping...LOL.Note>>> After baking...Take 1 cup of powder sugar and add just enough milk..to make it sorta liquid and drip it over the cake. Maybe 1 t. to 1T. should do it. Everyone just loves this one. Specially Sunday or Saturday mornings....

    List of Ingredients

    1 1/2 cup flour
    1/2 cup sugar
    2 t. baking powder
    1/2 t. salt
    1 egg
    2/3 cup milk
    3 T. melted margarine, shortening, or butter.

    Crumb Topping

    2 T. Butter
    2 T. Sugar
    1/4 Cup sifted flour
    1/4 cup bread crumbs
    1/2 t. cinnamon






















    Recipe

    Mix flour, sugar, baking powder, salt together.
    Beat egg and add to milk and shorting.
    stir liquids into dry ingredients Mixing only enough to dampen flour. Pour into grease pan 8X8. Sprinkle with the crumb topping and Bake 425 degrees for 25 minutes. Makes 1 coffee Cake.


    Crumb topping.....Cream butter and sugar together. Add Flour, crumbs and cinnamon. Mix to consistency of course crumbs and sprinkle overcofee Cake batter before baking.
