    List of Ingredients




    Cake:
    2 cups all-purpose flour
    3/4 cup granulated sugar
    2 tsp. baking powder
    1/2 tsp. each baking soda, salt
    1 egg
    1 tsp. vanilla
    1/3 cup melted butter or margarine
    1 cup orange juice
    1-1/2 cups chopped rhubarb (3 - 4 stalks, depending on size)
    Cake Topping
    1/4 cup brown sugar
    1 tbsp. finely grated orange zest
    1/2 tsp. cinnamon

    Recipe




    Heat oven to 350*F . Grease an 8x8" baking pan. Combine brown sugar, orange zest, and cinnamon for topping in a small bowl. Stir flour, sugar, baking powder, baking soda, and salt in a large bowl. In another bowl, lightly beat egg; blend in vanilla, butter and orange juice. Pour egg into dry mixture and stir just until evenly combined. Spread half in prepared pan. Top evenly with rhubarb. Spoon remaining batter on top and gently spread evenly over surface. Sprinkle topping evenly over surface. Bake about 40 minutes, until toothpick inserted in center comes out clean. Cool pan on wire rack before cutting into squares. Serve warm or cool. Makes 9 servings.
