    Candy Cane Snowballs

    2 cups butter, softened (no substitute)
    1 cup confectioners' sugar
    1 tsp. vanilla extract
    3-1/2 cups flour
    1 cup pecans, chopped
    8 oz. white candy coating
    1/2 cup peppermint candy canes, crushed

    Recipe



    Heat oven to 350ºF (175ºC). In large bowl, cream butter and confectioners' sugar. Stir in vanilla. Gradually add flour. Stir in pecans. Refrigerate 4 hours, until easy to handle. Roll into 1" balls. Place 2" apart on ungreased baking sheets. Bake 18 - 20 minutes, until lightly browned. Remove to wire racks to cool. In a microwave-safe bowl, melt candy coating; stir until smooth. Dip top of each cookie into candy coating, then into peppermint candy.
    Makes 5 dozen.
