    List of Ingredients

    1/2 Cup margine (1 stick)
    2 Tablespoons Baking Powder
    1 teaspoon vanilla
    1 cup carrots (cooked and mashed)
    (Cut up carrots very small and cook till very soft so
    you can mash. Small "chunks" of carrots OK)


    Recipe


    Put Oven on 375 degrees.
    Cream shortening and sugar, add eggs.
    Sift dry ingredients to mix.
    Add to butter and sugar and egg and egg mixture, Add Carrots and vanilla to mix. Mix thoroughly. Mix will be STICKY. Drop teaspoon on ungreased pan.(When dropped on cookie sheet they will be very irregular in shape. That is OK. Will not flatten out.)
    Bake 10 to 12 minutes. Don"t let get too hard. Cookies will not flatten.
    More of a peak shape. What to do is make several batches and put them in freezer bags and put in freezer. When ready to use, defrost the day before. Best use a "brush to frost" Gets messy.

    FROSTING:
    Powder sugar about 1 1/2 cups.
    Grate orange peel
    Squeezed orange juice
    1 teaspoon Vanilla.
    Can use orange juice and bottled grated orange peel.
