    Chef's Note: These cookies are to die for!!! These are probably my favorite Christmas cookie. They literally melt in your mouth and are very special. You really don't have to frost them, but it is a nice touch.

    List of Ingredients




    1 cup flour
    1/2 cup powdered sugar
    1/2 cup cornstarch
    3/4 cup soft butter
    1 tsp. vanilla

    Lemon Frosting:
    2 cups powdered sugar
    1/2 cup softened butter
    2 teaspoons fresh squeezed lemon juice Instructions:

    Cookies:
    Whisk dry ingredients together in a medium size bowl.

    In small bowl, cream butter until whipped, add vanilla. Blend together with dry ingredients. Dough will be stiff. Cover and refrigerate 2 hours.

    Roll into 1" balls and place on greased cookie sheet. Bake at 325°F, 20-25 minutes until set. These cookies should not brown. Let cool completely and frost with lemon frosting if you like...or you can dust with powdered sugar. Keep in tightly sealed container.

    Lemon Frosting:
    Stir together, adding lemon juice until a frosting consistency is obtained.
