Ricotta Cheese Cookies

2 cups each sugar, butter or margarine, softened
3 eggs
1 ctn ricotta cheese, 15 oz.
2 tsp. vanilla
1 tsp. each salt, baking soda
4 cups flour
Frosting:;
2 tbsp. each butter ir nargarune, softened; milk
2 cups sifted confectioners' sugar
optional food coloring
Recipe
Heat oven to 350º F. (175º C). Cookies: Mix sugar and butter in mixing bowl. Cream until light and fluffy. In another bowl, mix eggs, cheese, vanilla and salt, mixing well. Add creamed mixture and beat until well mixed. Sift flour and baking soda. Gradually add to egg mixture, beating after each addition. Drop dough by 1/2 tsp. on ungreased baking sheet. Bake 10 minutes; do not brown. Cool cookies on wire rack. Frosting: Mix butter, milk, confectioners' sugar and food coloring. Beat until creamy and spread on cookies. Makes 3 dozen
