Soft Peanut Butter Cookies

1 cup each sugar, creamy peanut butter
1 egg, slightly beaten
1 tsp. vanilla extract
Recipe
Heat oven to 325ºF (165ºC). Combine all ingredients; mix well. Roll dough into 1" balls and place on an ungreased baking sheet. Use a fork to press a criss-cross pattern into top of cookies. Bake 10 minutes, until golden. Let cool before removing from baking sheet. Makes 2 dozen.
