Thick, Chewy Oatmeal Raisin Cookies

1/2 cup (1 stick or 4 oz.) butter or margarine, softened
2/3 cup light brown sugar, packed
1 egg
1/2 tsp. each vanilla extract, baking soda, ground cinnamon
3/4 cup each all-purpose flour, raisins
1/4-1/2 tsp. salt
1-1/2 cups rolled oats
1/2 cup walnuts, chopped, optional
Recipe
Heat oven to 350° F (175° C). Line baking sheet with parchment paper. In a large bowl, cream butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk flour, baking soda, cinnamon and salt. Stir into butter/sugar mixture. Stir in oats, raisins and walnuts, if using. At this point either chill dough for a bit in refrigerator, then scoop it, or scoop cookies onto a sheet, then chill the whole tray before baking. You could also bake right away, if you're impatient. They end up slighly less thick. Cookies should be 2" apart on aking sheet. Bake 10 - 12 minutes (baking time will vary, depending on oven and how cold cookies were going in), taking out when golden at edges, but still a little undercooked-looking on top. Let sit on hot baking sheet for 5 minutes before transferring them to a rack to cool.
