    Really Yummy Ginger Cookies

    Source of Recipe

    Susan

    List of Ingredients

    2 cups sifted flour
    2 teaspoons baking soda
    1/2 teaspoon salt
    1 tsp cinnamon
1 tsp ginger (I use a level tsp of freshly grated)
1/2 tsp cloves (I use the pulvarizied jar variety)
    3/4 cups butter
    1 cup sugar
    1 egg
    1/4 cup molasses
A small bowl of sugar for dipping

    Recipe

    Preheat oven to 350F.

Sift together the flour, baking soda, salt, cinnamon and cloves. In another bowl cream until soft: butter and 1 cup of sugar, add the ginger. Add to the wet mix: egg and molasses till blended, then add -- a little at a time -- the dry ingredients to the wet mix.

Form into 1" balls, dip just the top into sugar bowl, then place on prepared cookie sheet, sugared side up. (The baking sheet can be a non-stick or a greased regular.) Place a few inches apart on sheet and bake for 12 to 15 mins. I opt for the lower time, and let the cookies cool for just a few minutes. on the sheet before transferring them to a cooling rack. This way they stay chewy. If you
cook for too long, they become hard upon cooling.

    Makes 5 dozen cookies.
