Chicken in the Pot

1-2carrots, sliced
1-2 onions, sliced
1-2 celery stalks, sliced
2-3 lbs. whole chicken [I use boneless chicken breast skinned]
1 teaspoon salt
1/2 tsp coarse black pepper
1/2 cup water/chicken broth/or white wine
1/2-1 tsp basilRecipe
Put ALL vegetables in bottom of crock pot. Add chicken. top with salt, pepper, and liquid. Sprinkle basil over top. Cover and cook on low 8 to 10 hours. [high 3 1/2 to 5 hours using 1 cup liquid]. Remove chicken and vegetables with slotted spoon or spatula.
Note : I use the boneless breast pieces and smaller amounts of vegetables
when just fixing for myself, and the whole chicken and larger amount of
vegetables for company. It's good!
