ORIENTAL BEEF NOODLES

Recipe Introduction
I found this recipe in "Organic Style" magazine. They had a series of easy, quick stir fry recipes. We tried it tonight and it was fantastic! Definitely a keeper! Thought I would share it with you so you can share it if you so choose. I plan to try every one of the recipes, I'll share them too, after we give them a try. Plan to make them all this week. :^)
List of Ingredients
1 pound boneless sirloin steak, cut into ½ inch thick strips
2 tbs rice bran oil
2 tsp Thai red curry paste
3/4 tsp sea salt
1/4 tsp ground white pepper
1 pkg (7 oz.) udon noodles
2 large shallots, thinly sliced
1 can (14 oz.) unsweetened coconut milk, well stirred
1/2 tsp sugar (I used organic maple syrup, out of sugar)
1 cup loosely packed fresh basil leaves
Lime wedges
Recipe
1) Place steak, 1 Tbs oil, curry paste, salt and pepper in a medium bowl, toss to coat. Marinate 20 minutes at room temperature or at least two hours in the refrigerator (can marinate overnight if you wish).
2) While steak marinates, cook noodles in boiling salted water until al dente (do not overcook). Drain, rinse briefly with warm water. Set aside.
3) Heat remaining oil in a wok (or a 12 inch skillet) over medium high heat. Add shallots and stir fry until golden brown, 3 to 4 minutes. Add steak and stir fry until browned all over, 2 to 3 minutes.
4) Reduce heat to medium, stir in coconut milk and sugar. Bring to simmer; cook until slightly thickened, about 2 minutes. Stir in noodles and basil; simmer 30 seconds. Serve in deep bowls with lime wedges.
