    SLOW COOKER VEGETABLES

    List of Ingredients


    4 celery ribs cut in 1" pieces
    4 small carrots cut in 1" pieces
    2 med tomatoes cut into chunks
    2 med onions thinly sliced
    2 cup cut fresh green beans cut in 1" chunks
    1 med green pepper cut in 1" pieces
    1/4 cup butter, melted
    3 Tbs quick-cooking tapioca
    1 Tbs sugar
    2 tsp salt -- optional
    1/8 tsp pepper


    Recipe



    Place the vegetables in a slow cooker. Combine butter, tapioca, sugar, salt, if desired, and pepper; pour over vegetables and stir well. Cover and cook on low for 7-8 hours or until vegetables are tender. Serve with a slotted spoon.
