    OLD-FASHIONED APPLE CRISP

    Source of Recipe

"Forbidden Foods Diabetic Cooking" by Maggie Powers

    List of Ingredients

    - 2 large baking apples, peeled, cored, and sliced (4 cups)
    - 1/3 cup old-fashioned rolled oats
    - 1/3 cup firmly packed brown sugar
    - 1/3 cup all-purpose flour
    - 1/2 teaspoon cinnamon
    - 1/4 teaspoon nutmeg
    - 1/4 cup margarine
    - 1 cup lite whipped topping

    Recipe

Preheat then oven to 375 degrees F. Spray an 8x8-inch round cake pan with nonstick cooking spray.

Place the apples in the bottom of the prepared pan; they should almost fill the pan.

In a medium bowl, stir together the oats, sugar, flour, cinnamon, and nutmeg. Cut in the margarine with a pastry blender or 2 knives until the mixture resembles coarse crumbs, 2-3 minutes. Spoon this mixture on top of the apples. Bake until the top is crispy and lightly browned, 30 to 35 minutes. Top each serving with 2 tablespoons whipped topping.
    Yield: 8 servings
