    Recipe Introduction


    This is very easy and very good. I've used Mai Mai fish. I've a can of veg-all in place of the potatoes and frozen vegetables.

    List of Ingredients





    1 lb cod or other lean fish fillets

    1/4 cut-up bacon or salt pork

    1 medium onion, chopped (about 1 cup)

    1 medium potato chopped (about 1 cup)

    1 1/2 cup frozen mixed vegetables

    1 1/4 cup water

    1/2 to 1 tsp salt

    1/8 tsp pepper

    2 cups milk

    2 tbsp flour

    chopped parsley

    Cut fish fillets into 1-inch pieces. Cook bacon in 3-qt saucepan, stirring frequently, until crisp. Remove bacon, drain. Drain fat from saucepan. Stir onion,

    potato, frozen vegetables, water, salt and pepper into saucepan. Heat to boiling; reduce heat cover and cook 5 minutes. Stir in fish . Heat to boiling;

    reduce heat. Cover and simmer 5 minutes or until fish flakes easily with fork. Mix 1/4 cup of the milk and the flour; gradually sir into fish mixture. Stir

    in remaining milk. Heat to boiling; reduce heat. Boil and stir 1 minute. Sprinkle with bacon and parsley.
