    Open-Face Crab Meat Sandwiches

    List of Ingredients




    1 can (6 oz) crab meat, drained and flaked
    2 tbsp. chopped green onion
    2 tbsp. mayonnaise
    1 tbsp. lemon juice
    1/4 tsp. salt
    dash pepper
    4 slices bread, toasted and lightly buttered
    4 large tomato slices
    4 Swiss cheese slices

    Recipe




    Combine crab meat, green onion, mayonnaise, lemon juice, salt and pepper.
    Put toast on a microwave-oven safe roast rack, set in a glass baking dish. Put a tomato slice on each toast slice.
    Top with crabmeat salad and a cheese slice. Heat uncovered in microwave 1 to 1-1/2 minutes on High, or until cheese melts.
    Serve immediately.
    Makes 4 sandwiches.
