    Recipe Introduction

    She told me how to make them.I used to make them for breakfast camping out in Houston State Park in Ohio. Children were small. I did not put the matzo meal in, but flour.

    List of Ingredients



    5 large Idaho potatoes (about 2-1/4 lb.)
    1 large onion
    1 tsp. salt
    1/4 tsp. freshly ground black pepper
    2 eggs, lightly beaten
    2 tbsp. matzo meal (generous)


    Recipe


    Coarsely grate potatoes and onion with a hand greater or a food processor. Place in a colander set over a large bowl, and squeeze out as much liquid as possible. Pour off liquid from bowl, leaving potato starch that settled to bottom. Add potatoes, onions, salt, pepper, eggs and matzo meal and mix well. Heat about 1/2" oil in 1 or 2 large heavy skillets over a medium-high heat; use a heaping tbsp. batter to form each latke. Cook a few minutes until edges start to turn light brown; flip over. watch closely. You be the judge. Serve with sour cream (any type -- low fat or regular) and apple sauce.
