    MEAT BALLS IN TOMATO GRAVY

    for meat balls:
    mixing bowl 2 qt. capacity
    1 lb. lean ground meat- beef
    1 cup finely minced sweet onions
    1 or 2 cloves garlic-mince3 extra large eggs
    Mix together the following:
    3/4 cup to 1 cup dry bread crumbs.(do not pack down.)
    1/4 cup grated romano cheese (for milder flavor subsititute grated paranesan cheese)
    pot with cover- 3 qt. Capacity
    1/3 cup olive oil

    In the 2 qt. mixing bowl, combine the ground meat, minced garlic & onions. Add eggs & mix with clean hands. The mixture should be tender. (If not add 1/2 cup milk- more or less) Dip fingers in water or hands- shape each into a ball or small meat loaf. My grandmother did this way. Should get about 15 to 18. I usually make gravy first. Fry on medium heat both sides till brown. Then drop into gravy.
    Make sure when cooking meat balls after gravy...you do put in the gravy the bits and brown stuff on the botton of fry pan into gravy. Mix gently.
