    The oil & brown bits remaining in fry pan use for gravy.

    2 cups minced sweet onions
    2 cloves garlic, minced
    2 tablespoon dry marals wine (red)
    2 6oz. cans Italian style tomato paste. Fill each tomato can with water 5 times each.
    1 1/2 teaspoon salt
    1/4 teaspoon black pepper
    1 1/2 teaspoon dried basil

    Put onions, garlic in oil & fry slowly for 10 minutes, do not brown. Then add wine & loosen up the good brown stuff on the bottom. If necessary use some water. Add tomato paste until you get it dissolved. In large pot put all of this. Then add water. If you have cooked the meat balls & sitting in bowl- make sure you gently put all & even the drippings ooged out of them. Turn down the heat and simmer & cover. Cook gently 30 to 45 minutes or longer or until gravy gets desired thickness you like.
    Meat balls can be made from beef chuck, beef sirlon tip, or veal round.
    I love extra sauce on my spaghetti or macaroni.
