8 eggs
1 qt. heavy cream
1 tbsp. lemon zest, finely grated
1/4 tsp. ground nutmeg
1-1/4 lb. granulated sugar
6 tbsp. baking powder
3 lb. cake flour
1 tbsp. Kosher salt
1 lb. fresh blackberroes, to 1-1/2 lb,
1 lb. unsalted butter or msrgsrine, melted
Recipe
Heat oven to 375ºF (185ºC). 1Whisk eggs, cream and zest together by hand. Sift dry ingredients. Add berries or nuts, tossing to coat evenly with flour mixture. Add dry ingredients to egg mixture and stir until about 1/3-mixed. Add melted butter and finish mixing.4. cortion into greased muffin tins and bake about 15 - 18 minutes.
