Feta and Chive Muffins

1-1/2 cups flour
3 tsp. baking powder
1/4 tsp. salt
2 eggs
1 cup milk
2 tbsp. butter or margarine, melted
1/2 cup crumbled feta cheese
3 tbsp. snipped chives
Recipe
Heat oven to 400ºF (200ºC). Grease or paper-line muffins cups. In a bowl, combine flour, baking powder and salt. In another bowl, whisk eggs, milk and butter. Stir into dry ingredients just until moistened. Fold in feta cheese and chives. Fill prepared muffin tins 2/3 full. Bake 18 - 22 minutes, until a toothpick inserted into center comes out clean. Cool 5 minutes before removing from pans to a wire rack to cool completely. Serve warm. Refrigerate leftovers. Makes 12 muffins.
