    Fresh Peach Muffins

    1 cup peeled, chopped fresh ripe peaches
    1 tsp. fresh lemon juice
    1 cup each all-purpose flour, whole wheat flour, fat-free milk
    1/4 cup sugar
    1 tbsp. baking powder
    1/2 tsp. mace
    1/4 tsp. salt
    1 large egg, or 1/4 cup egg substitute
    1/4 cup canola or corn oil


    Recipe




    Heat oven to 400º F. (200º C). Prepare a 12-cup muffin pan with nonstick spray or line muffin cups with paper liners. Combine peaches and lemon juice in a small bowl. Stir to mix; set aside. In a large bowl, combine flours, sugar, baking powder, mace and salt; mix thoroughly. Beat egg, oil, and milk in a small bowl. Add to dry ingredients and stir until flour is moistened. Fold in peaches. Divide batter among muffin cups; each will be about 2/3 cull. Bake about 25 minutes, or until a toothpick inserted in center of a muffin comes out clean. Remove muffins from pan immediately to avoid sticking. Makes 12 muffins.
