Oat Bran Muffins

List of Ingredients
2-1/4 cups oat bran
1/4 cup brown sugar, firmly packed
1 tbsp. baking powder
1-1/2 tsp. ground cinnamon
3/4 cup fat-free milk
1/4 cup egg substitute, or 1 egg
2 tbsp. canola oil
1 cup unsweetened applesauce
1 medium banana, mashed
2 tbsp. dried fruit, such as raisins, dates, apricots
Recipe
Heat oven to 425ºF (215ºC). Spray muffin tins with nonstick cooking spray. Mix oat bran, brown sugar, baking powder and ground cinnamon in a large bowl. Set aside. Combine milk, egg and oil. Mix applesauce with mashed banana; add to milk and egg mixture, stirring to blend well. Fold dry mixture into milk, egg and applesauce mixture. Blend just until moistened. Pour batter into prepared muffin tins. Do not use paper liners, as muffins have a tendency to stick to paper. Bake 15 - 17 minutes. Makes 12 muffins.
