Oatmeal-Apple-Raisin Muffins

List of Ingredients
1 egg
1 cup buttermilk (or 1 cup of milk with 1 tbsp. lemon juice added)
1 cup oatmeal, either quick-cooking or old-fashioned oatmeal
1/2 cup each brown sugar, cooking oil
2 cups flour
1 tsp. baking powder
1/2 tsp. each salt, baking soda
1/4 - 1/2 tsp. cinnamon, to taste
1 apple, chopped
1/2 cup each raisins, chopped walnuts, optional
Recipe
Heat oven to 375ºF (185ºC). Chop apple and put into a mixing bowl. Add raisins. Measure out remaining ingredients. Stir just until dry ingredients are moistened. Grease muffin cups, fill to 2/3 full. Bake 20 - 25 minutes, until golden brown. Allow to cool 5 - 10 minutes, then remove from muffin tins. Makes 2 dozen muffins.
Note: Instead of greasing muffin tins, use cupcake papers. That way you won't have to work so hard to scrub muffin tins.
