Oatmeal Apple Raisin Muffins

1 1/2 cups rolled oats
2 cups all-purpose flour
4 1/2 tsp baking powder
2 tsp ground cinnamon
3/4 tsp ground nutmeg
3/4 cup canola oil
2 eggs
2/3 cup packed brown sugar
3/4 cup dark raisins
2 Granny Smith apples peeled, cored, and coarsely grated
Recipe
Preheat oven to 350 degrees. Combine flour, oats, baking powder, cinnamon, nutmeg, and salt and stir with a wire whip. Blend milk, oil, eggs, and brown sugar in a blender until smooth. Pour wet ingredients into dry ingredients and begin to combine then add raisins and grated apples. Mix just until combined. Scoop into prepared muffin tin and bake for about 25 minutes or until golden brown. Turn muffin pan halfway through baking to ensure even browning. Serve hot. Makes 12 muffins.
