    Muffins:
    1/4 cup butter or margarine, softened
    1/2 cup sugar
    1/4 cup packed brown sugar
    2/3 cup canned pumpkin
    1/2 cup buttermilk
    2 eggs
    2 tbsp. molasses
    1 tsp. orange zest
    2 cups all-purpose flour
    1 tsp. each baking soda, cinnamon
    1/2 tsp. baking powder
    1/4 tsp, each ginger, salt
    1/8 tsp. cloves
    Streusel Topping:
    1/3 cup all-purpose flour
    3 tbsp. brown sugar
    2 tbsp. cold butter or margarine
    2 tbsp. rolled oats, optional

    Recipe




    Heat oven to 375ºF (185ºC). Cream butter and sugars until creamy. Beat in pumpkin, buttermilk, eggs, molasses and orange zest. Combine dry ingredients in a small bowl and mix into batter. Stir just until combined. Fill greased or paper-lined muffin pan cups 2/3 full. Topping: Combine flour, brown sugar and oats (if using) in a small bowl. Cut in butter until mixture is crumbly. Spoon streusel topping over muffins. Bake 20 - 25 minutes, until a tester inserted in center comes out clean. Cool in pan 5 minutes before removing to a wire rack. Makes 12 servings;.
