    1 egg
    1-1/4 cups packed brown sugar
    1 cup buttermilk
    1/2 cup vegetable oil
    2 tsp. vanilla
    2-1/2 cups all-purpose flour
    1 tsp. each baking soda, baking powder
    1/2 tsp. salt
    1-1/2 cups fresh rhubarb
    1/2 cup chopped walnuts
    Topping:
    1/3 cup sugar
    1 tsp. ground cinnamon
    1 tsp. butter or margarine, melted

    Recipe




    Heat oven to 375ºF (185ºC). In a mixing bowl, beat egg. Add brown sugar, buttermilk, oil and vanilla; beat 1 minute. Combine dry ingredients; stir into sugar mixture just until moistened. Fold in rhubarb and walnuts. Fill greased or paper-lined muffin cups 3/4 full. Combine topping ingredients; sprinkle over muffins. Bake 20 - 25 minutes, until a toothpick comes out clean. Makes 12.
