Ingredients for meat balls
Mixing bowl- 2 quart capacity
1 pound lean beef round- ground only once
1 cup finely minced yellow onions
1 or 2 cloves fresh garlic, minced
2 extra large eggs ( equals 1/2 cup)
Mix together the following:
3/4 cup dry bread crumbs (grated stale French bread)-do not pack down
2 1/2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons minced parsley
1/4 cup grated Romano cheese (for milder flavor, substitute grated Parmesan cheese)

1/3 cup olive oil

In the 2 quart mixing bowl, combine the ground meat, minced onions and garlic. Add the bread crumb mixture to the meat mixture. Blend thoroughly.
Add the eggs and mix until all ingredients are well mingled. The mixture should be tender, not compact.
Should get about 18 meat balls. Wet your hands or dip your fingers into water to shape them. If you divide the mixture into 3. and get 6 out of each section... you will get 18.
Heat the 1/3 cup of oil and brown a few meat balls at a time.Use moderate heat. Put them in the Gravy.
