1 lb. ground beef
1/4 t. salt
1 C. chopped onion
2 C. cottage cheese drained
2 cloves garlic crushed
1/3 C. Parmesan
1 can (28 oz) whole tomatoes undrained
1/4 t. nutmeg
2 C. sliced mushrooms
2 pkg. (10 oz each) frozen spinach
1/4 C. parsley
14 uncooked manicotti shells
1 t. basil
2 T. Parmesan cheese
1 t. fennel seed
Recipe
Heat oven to 350. Cook ground beef, onion and garlic in skillet, stirring frequently until beef is brown, drain. Stir in tomatoes, mushrooms, parsley, basil, fennel seed and salt; break up tomatoes. Heat to boiling, reduce heat. Cover and simmer 10 minutes. Spoon about 1/3 of the beef mixture into ungreased 9x13" baking dish. Mix cottage cheese, 1/3 C. Parmesan, nutmeg, pepper and spinach. Fill manicotti shells with spinach mixture, place shells on beef mixture in baking dish. Pour remaining beef mixture evenly over shells, covering completely. Sprinkle with 2 T. Parmesan. Cover and bake about 90 minutes or until manicotti shells are tender
